Nora Singley is the cook who discovered the one-pot pasta method in Italy—the hidden hand behind its viral rise. She is a California-born, New York–trained recipe developer with two decades of experience as a professional cook. She spent nearly seven career-defining years working for Martha Stewart in her test and television kitchens, forming the basis for an admittedly motley résumé as a line cook, cheesemonger, food writer, restaurant consultant, culinary producer, and food stylist.

Now she is dream-jobbing it as the Head of Culinary for cookbook author Molly Baz; writes NOODLE, a lighthearted Substack recipe newsletter; and leads culinary development at Face Plant, an award-winning, plant-based fast-food restaurant in Portland, Oregon. She lives in Los Angeles with her family. This is her first book.

  • “One of our most popular recipes at Martha Stewart Living is the iconic One-Pot Pasta. A simple yet satisfying recipe brought to our studio test kitchen by longtime contributor Nora Singley in 2011. This wonderful book brings over 45 delicious new recipes and variations to life utilizing this fabulous time-saving technique. I cannot wait to cook my way through each and every recipe in this book. It’s definitely a Good Thing.”
    Martha Stewart
  • “As someone who’s had the pleasure of working with Nora for almost a decade, I know her magic in the kitchen intimately. In a sea of cookbooks, why choose this one? Because these recipes were created with YOU, the home cook, in mind. Because Nora will leave no stone unturned when it comes to perfecting a dish. Because getting a really friggin’ delicious meal on the table just got a whole lot easier thanks to the one-pot pasta method.”
    Molly Baz
  • “I am in awe of what Nora can do with a pot, a plan, a little bit of pasta, and plenty of pizzazz. This is exactly the reminder I needed that pasta is the perfect canvas for delicious innovation.”
    Dan Pelosi
  • “A lively, nonna-approved collection of dreamy pastas you cannot mess up because Nora has every angle covered.”
    Deb Perelman
